George Washington's Ale Recipe

Chimay
Since 1862 the Cistercian Trappist monks of Chimay have been developing the production of Trappist beers. Ch imay is always brewed on site at the Abbey, which guarantees its authenticity and quality. It is bottled at Baileux, a few kilometres from the Abbey.

Trappisty Rochefort
- Rochefort 6 (7.5% ABV). Reddish colour, very consistent texture with a slightly spicy aroma and an intense taste of caramel, fruit, and hints of raisins.
- Rochefort 8 (9.2% ABV). Yellowish-brown colour, with a more pronounced aroma and more fruits.
- Rochefort 10 (11.3% ABV). Reddish-brown colour, with a very compact head and an aroma of figs, feels like honey in the mouth. The alcohol profile is a major component in the flavour of this rich ale.

Westmalle Trappist Ales
- Westmalle Tripel (9.5% ABV) - A clear, golden yellow Trappist beer that undergoes a secondary fermentation in the bottle. It is a complex beer with a fruity aroma and a nice nuanced hop scent. It is soft and creamy in the mouth, with a bitter touch carried by the fruity aroma.
- Westmalle Dubbel (7% ABV) - a dark, reddish-brown Trappist beer with a secondary fermentation in the bottle. The creamy head has the fragrance of special malt and leaves an attractive lace pattern in the glass. The flavour is rich and complex, herby and fruity with a fresh-bitter finish.

- Imperial Stout - The Emperor of Stouts. Rich in texture, broad, soft and creamy. The most robust and fullest of all stouts.
- Imperial IPA - Above and beyond an India Pale Ale, Imperial IPA is radically hopped with an intense aroma and hop bitterness.
- Imperial YSB - Smooth & malty with a kick of bitterness, this is a couple noches above the standard YSB!
- Imperial Barley Wine - An unfiltered and unfined Barleywine. Intense, robust, malty and dark. The cognac of beers.
- Imperial Pilsner - Golden in color with a dry hop floral aroma and intense hop bitterness supported by a big malty backbone which culminates into a hedonistic mouthful.
- Double Dead Guy Ale - Deep amber copper color. Buttery peanut brittle, orange blossom tea aromas follow through to a rich chewy and fruity full body with nice notes of caramel drizzled dried apricot and roasted grains and spice. Finishes with a long, tangy grilled grapefruit and chocolate fade.

"Our newest addition to our Harvest family is Southern Hemisphere Harvest. This is the first time we know of that an American brewer has put out a beer with fresh-picked hops from the southern hemisphere. The inaugural ale will debut in late April and will feature fresh Pacific Hallertau, New Zealand Motueka and New Zealand Southern Cross hops, all from New Zealand."

Rich & Dans Rye IPA
"The combination of Pale, Maris Otter, Rye, Caramel 60, Flaked Rye, and Vienna yield a complex malt body that stands up to the spiciness of the rye and the pronounced hop flavor. The rye also adds a reddish hue to the beer. The kettle additions of Centennial, Willamette, and Chinook, and the dry hop addition of Falconer's Flight add a multidimensional hop character. This beer has a fruity, subtly spicy aroma, a full mouthfeel, and a dry finish."

KÖLSCH
Kölsch is a crisp, clean, easy-drinking ale. It has a straw-yellow hue similar to a pilsner, but is less hoppy, a bit sweeter and uses pale malts and a small amount of wheat. The lager-like characteristics this ale is famous for are achieved by using a liquid Kölsch yeast.
GERMAN OKTOBERFEST
Amber in color with a nice blend of Munich malt and crystal grains. Medium-bodied, malty and finished with a distinct hop flavor. This kit includes a lager yeast that will also perform well if fermented at ale temperatures.
DUNKELWEIZEN
Munich and chocolate malts combine to create a darker, maltier version of its lighter counterpart, Hefeweizen. Amber-brown in color yet medium-bodied with a slightly sweet, bready flavor. A specialty wheat yeast produces the characteristic phenols found in traditional Weizens.
RUSSIAN IMPERIAL STOUT
This full-bodied dark brew has an intense roast flavor with a huge malt influence. The hop bitterness is offset by a touch of sweetness from the big malt character. Give this beer some time to mature and consider using an oak alternative for added complexity.
IMPERIAL PALE ALE
This beer style has been perfected on the West Coast and we are proud to create an extract version for the homebrewer. This beer is very big, very hoppy and somewhat arrogant. Use your homebrewing skills to make the most of this recipe!
AMERICAN NUT BROWN
A rich, complex high-gravity specialty ale. It's a full-bodied brew with plenty of hop character to balance this Imperial style Brown Ale. The slight caramel and chocolate flavors are followed by a nutty aftertaste. Includes premium Safale S-04 yeast.
